A fantastic Dad-pleasing recipe from Food & Wine magazine for chili with beer, chocolate & coffee- what’s not to love?!

.

OK, I confess- I’m crazy about this chili too!  It is HOT so you might want to diminish the amount of chiles that it calls for, but the coffee, beer and chocolate really add a nice depth of flavour. Use the best quality short ribs you can find.

  1. I agree! My 17 year old daughter walked by the computer as I was reading this and asked, “Who’s the hottie?” referring to your daddy. I told her, “Slim Paley’s dad – from a long time ago”. She said, “He’s cute… and I want that shirt he’s wearing.” (Of course, she also liked the bear’s shirt as well…)

  2. My favorite dad would have to be Atticus. But I would like to take both the baby giraffe and the baby elephant home. That little tongue poking out from under his trunk… Have a wonderful Father’s Day–your dad was really handsome and probably still is.

  4. My father’s birthday is today, and father’s day, tomorrow. He would have been 88, it has been 8 years since he passed away. He was the best man I have ever known….another sweet post, Slim. Thank you, and happy father’s day to Mr. Slim Paley also. He’s a keeper! :)

  5. I love that picture of your dad in Italy – wow were our dads ever that young? My fav tv dad was also Aticus, although I did like Pa Walton as well. The pic of the daddy giraffe is heartwarming. Hope you have a great day with your dad tomorrow, I’m having lunch with mine at Kits beach.

  6. Wow – all teared up – so I’ll just say thank-you. I was 18 in that picture, sitting on the wall at the Franco/italian border. ’twas quite a few years later when your Mom and I passed by that same
    location – on our honeymoon. Maybe that was when you caught a glint in my eye! Much love……Dad

How cute that “the frog” referred to your hubby as “Monsieur Slim Paley”! Hee hee. Love the baby elephant photo too. Happy Father’s Day Grandad SP and Monsieur Slim Paley! I am seeing my Dad tomorrow. Can’t wait.

  12. My favorite fictional father is Andy Taylor. I had the Andy Griffith show on one day when my oldest daughter was a lot younger. First she asked why there was no color on the TV then she asked why Opie called his dad “Paw.”

  16. Happy Father’s Day, that was beautiful. I lost my father to the Hong kong Flu when I was 8, but he was just as handsome! My Mother has a signed copy of to Kill A Mockingbird. Atticus was a lawyer, like my Daddy, that’s who I pictured when I thought of him, and his principals were just as high! Thank you again for a wonderful post, it made me cry.

  18. Oh Slim, this post and Cat’s song, made me miss my father so much. This is the second father’s Day without him. It seems so wrong. To not have him here after 54 years of my life seems unfair and wrong. I was so blessed to have him for so long, for him to walk me down the aisle, be a grandfather to my sons, show me what being married for 58 years looks like. My husband called him Dad since he lost his father in the early nineties. Today, there is a special void.
    You are blessed to have your glinty eyed dad with you. Much love to you and yours today.
